
Just like any mother says she loves all her children just as much I don't openly admit I have favourites but some guests just get an extra special place in my heart. In this particular case I believe I even got a little special place in theirs with a very simple recipe I found online (here for the dutch & flemish).
As a nutritionist I'm almost ashamed to share the ingredients but here they are: 200g butter (at room temperature)
200g sugar
8g vanilla sugar
250g flour
a little salt
1 egg (and 1 extra to brush onto the cake before it goes into the oven)
Method:
Preheat oven to 180°C. Whisk butter and sugar together until fluffy.
Add the egg and incorporate well.
Stir in the salt, vanilla sugar and flour and combine into a smooth mixture. Pour into a cake form with a diameter of about 24-26 cm, flatten with a spatula and brush with the egg wash.
Bake for about 25-30 minutes, let cool & enjoy!
PS: I recommend to cut the cake in tiny little pieces as it's the richest thing you'll have ever had!
Next time I try this recipe I'll be adding saffron too! <3
